Nine Years in SE8

The Baker's Art opened in 2015 in a small railway arch on Creekside, Deptford — a neighbourhood that has always known how to make something from nothing. Emre Kubilay had spent the previous decade baking in professional kitchens across London, Istanbul and Copenhagen, learning everything he could from bakers who took their craft as seriously as any fine-dining chef.

The early days were lean. Emre baked alone, starting at 3am and delivering by bicycle to a handful of cafés in Greenwich and New Cross. The bread sold. The accounts grew. The bicycle became a van.

Nine years on, The Baker's Art supplies over 80 businesses across South East London — but the approach in the bakery hasn't changed. The same hands. The same hours. The same uncompromising standards.

A Culture Worth Preserving

The sourdough starter at the heart of every Baker's Art loaf was created in 2009. It has been fed, maintained, and carried through every change, every move, and every challenge that the past 15 years have brought.

A sourdough starter isn't just a leavening agent — it's a community of wild yeasts and lactic acid bacteria that has been shaped by its environment, its flour, the water, the air of Deptford SE8. No two starters are alike, and ours is irreplaceable.

It's what gives our bread its characteristic flavour: the clean, open tang that sits beneath every variety, from the Classic White to the Miso & Sesame. It's what makes our bread taste like nowhere else.

Organic, Always

We use 100% certified organic flour, milled in the UK from heritage and conventional varieties depending on the loaf. Our water is filtered through a commercial reverse osmosis system. Our salt is unrefined Atlantic sea salt. That's it.

No improvers, no dough conditioners, no ascorbic acid, no preservatives. We believe that good bread doesn't need them — and that our customers, and our customers' customers, deserve to know exactly what they're eating.

When we add inclusions — walnuts, olives, dried fruit, seeds — they are sourced from certified organic suppliers wherever possible and always of the highest quality we can source at that volume.

Bread Beyond the Business

We are part of Deptford. The neighbourhood gave The Baker's Art its start, and we take that seriously. Every day we have unsold or slightly imperfect loaves — bread that is still excellent but wouldn't meet our display standards — and every day those loaves go to the Deptford Pantry food project and two local homeless shelters.

We also run a monthly open bakery morning for local school groups and community organisations, giving young people the chance to work with dough, understand fermentation, and connect with where their food comes from.

Great bread is only part of the story.

the Bakery

The starter: 15 years old and fed every morning
01Our mother culture, kept at consistent temperature in its ceramic crock since 2009.
Shaping: each loaf hand-formed before cold retarding overnight
02Every loaf is shaped by hand, then retarded in the walk-in fridge for 16–18 hours.
The oven: deck-fired at 250°C with steam injection
03Our deck oven creates the crust conditions that industrial tunnel ovens simply cannot replicate.

04By 6am the vans are loaded. Most accounts receive their bread before 8am.
